A spice mix with the right balance of mint, green chilli and herbs that takes you straight to the biryani capital of Tamil Nadu.

How to cook

  1. Soak 500g (1lb) seeraga-samba rice for at least 30 mins. If using goat meat, cook it in a pressure cooker first with salt and save the broth.
  2. Mix both package contents with 400ml water to make a paste.
  3. Add 75ml oil & 75ml ghee to the paste. Sauté on low-medium heat for 20 minutes.
  4. Add 500g (1lb) cooked goat or fresh chicken or vegetables, 100ml curd and half a lemon; sauté for a few minutes.
  5. Add required amount of water (or goat broth) and allow to boil, then add the soaked rice, 1 teaspoon ghee and 1 cup chopped mint leaves.
  6. Cook in a pressure cooker or tightly sealed pan until done.

Ready in 15–20 minutes. Each XL pack serves 4–6.

I dont know how they made it, but they did it. Tastes very much like dindigul style briyani with the correct rice. Personally very satisfied with the simplicity of the process and the results.
